At the top floor of the Hotel Angeleno in Brentwood, head chef Laura Scollan at West Restaurant concocts fresh and inventive dishes served with a beautiful view of the Westside.
Since arriving in December, Scollan has reinvented a seasonal menu and started a new mix of happy hour dishes on the 17th floor of the iconic circular building off the 405 near Sunset.
“We’re trying to build up our local clientele here so they know that in a couple of months they can come back and it will be a totally different menu,” Scollan said.
On a recent visit, she showed off a seared Scottish salmon with sweet pea truffle risotto as well as a bourbon peach BBQ chicken with fingerling potato salad. For starters she produced a row of sliders with caramelized onions and smoked cheddar.
Scollan, who grew up in upstate New York, said she loves the creativity afforded at West to work with local ingredients.
“This hotel is privately owned so we have a lot more freedom here to change the menu on a daily basis if need be,” she said. “My favorite thing is inventing new flavors.” In September look for Scollan’s new Fall menu that includes more braised meat and hearty root vegetables.
