Guests at the new Holy Cow BBQ across from Brentwood Country Mart can be assured what’s served is the best barbecue in America. That’s because owner Rob Serritella personally went on a sort of BBQ pilgrimage, ultimately choosing his favorites for his new restaurant.
Over the past three years, Serritella traveled the country sampling the best slow-smoked goodness the nation has to offer and quietly making his selections to try back home. When it came to brisket he chose a style found in Austin, Texas. For pulled pork he went with the yellow mustard and pickles of the Carolinas. In terms of tri-tip, Serritella chose Santa Maria, California where the chosen cut is slow roasted overnight. And finally for the granddaddy rack of baby back ribs he bowed to the dry rub found in Memphis, Tennessee.
For Serritella, who went to school to be an accountant and fell into the restaurant business 37 years ago, creating Holy Cow BBQ has been a labor of love. He had already experimented with a smoker at his other restaurant Mess Hall in Hollywood. Holy Cow BBQ, which opened in September across from the Brentwood Country Mart, occupies the location previously a Louissa’s Trattoria, which Serritella co-owns.
“I’ve always wanted to create an all barbecue place so to actually do it has been a lot of fun,” he said.
In a tradition most found in Texas BBQ joints, Holy Cow sells its own paraphernalia of shirts and hats. So far the response to the restaurant has been overwhelming.
“The first weekend we couldn’t answer the phones fast enough,” Serritella said. “It’s been great. We’ve been having a lot of fun and the people in the neighborhood have been really welcoming.”
During our visit, we tasted the pulled pork on a brioche bun, the baby back ribs, onion rings and a green salad. Holy Cow BBQ is also open for take-out and catering. Holy cow is it good!
